Meet Paul Hayes, cofounder of VIVIR Tequila, who uses sustainably grown mature agave for his premium, traditional tequilas which take up to nine years to grow..
“I got the idea to create a premium tequila made the traditional way with mature agave, ” says Paul, “We met lots of different distilleries, but only one could offer us everything we wanted - the family owned Casa Maestri.”
“Sustainability was important to us too, and Casa Maestri, unusually, allows a percentage of the crop to flower, supporting pollinators and wildlife.”
